Ingredients

200g dried noodles (your choice - egg noodles or rice noodles)

3 tablespoons vegetable oil

6 cloves garlic, minced

2-3 tablespoons chili paste (adjust to taste)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for depth)

1 tablespoon rice vinegar

1 teaspoon sugar

1 bell pepper, thinly sliced

1 cup broccoli florets

2 spring onions, chopped

Fresh cilantro for garnish

Sesame seeds for garnish

Instructions

Cook the Noodles: In a large pot of boiling salted water, cook the noodles according to package instructions until al dente. Drain and rinse under cold water. Set aside.

Prepare the Stir-Fry Sauce: In a small bowl, mix together the chili paste, soy sauce, oyster sauce (if using), rice vinegar, and sugar. Adjust seasoning based on your taste preference.

Stir-fry the Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Next, add the sliced bell pepper and broccoli florets, cooking for about 3-4 minutes until they are tender yet crisp.

Combine Noodles and Sauce: Add the cooked noodles to the skillet with the vegetables. Pour the stir-fry sauce over the noodles and toss everything together until well combined and heated through, about 2-3 minutes.

Final Touches: Stir in the chopped spring onions and garnish with fresh cilantro and sesame seeds before serving.

Serve and Enjoy: Plate the chili garlic noodles and enjoy their spicy, garlicky goodness!
