Ingredients
  

10-12 dried Arbol chilies

2 medium tomatoes, halved

1/2 medium onion, roughly chopped

2 cloves of garlic, peeled

1/2 cup fresh cilantro, roughly chopped

1 tablespoon olive oil

Juice of 1 lime

Salt to taste

Water, as needed

Prepare the Chilies: Remove the stems and seeds from the dried Arbol chilies. This will help reduce the heat slightly, but you can leave some seeds if you prefer a spicier salsa.

    Toast the Chilies: In a dry skillet over medium heat, toast the chilies for about 1-2 minutes until fragrant, stirring frequently to prevent burning. Remove from heat and set aside.

      Roast the Vegetables: In the same skillet, add the halved tomatoes, onion, and garlic. Roast the vegetables for about 5-7 minutes until they are slightly charred and softened.

        Blend the Salsa: In a blender or food processor, combine the toasted chilies, roasted tomatoes, onion, garlic, fresh cilantro, olive oil, and lime juice. Blend until smooth, adding water as needed to reach your desired consistency.

          Season: Taste the salsa and add salt to your preference. Blend again briefly to incorporate the salt.

            Serve: Transfer the salsa to a bowl and let it sit for at least 15 minutes to allow the flavors to meld. Serve with tortilla chips, tacos, or drizzled over your favorite Mexican dishes.
