Ingredients
  

4 large russet potatoes

1 can (15 oz) chili (vegetarian or meat, your choice)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, sliced

1/4 cup jalapeños, sliced (optional)

Salt and pepper to taste

Olive oil for brushing

1 teaspoon garlic powder

1 teaspoon onion powder

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the potatoes under cold water and pat them dry. Prick each potato several times with a fork to allow steam to escape during baking.

      Rub the potatoes with olive oil and sprinkle with salt, garlic powder, and onion powder for flavor.

        Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and a fork easily penetrates the flesh.

          While the potatoes are baking, heat the chili on the stove over medium heat until warmed through.

            Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open lengthwise and fluff the insides with a fork.

              Spoon a generous amount of warm chili over each potato, followed by a sprinkle of shredded cheddar cheese.

                Return the potatoes to the oven for an additional 5-10 minutes or until the cheese is melted and bubbly.

                  Remove from the oven and top each potato with a dollop of sour cream, sliced green onions, and jalapeños if desired.
