Chickpea & Veggie Soup with Ditalini

Ingredients
  

1 cup ditalini pasta

1 can (15 oz) chickpeas, drained and rinsed

1 medium onion, diced

2 cloves garlic, minced

1 medium carrot, diced

1 medium zucchini, diced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 tsp dried thyme

1 tsp smoked paprika

1 tsp ground cumin

Salt and pepper to taste

2 tbsp olive oil

1 tbsp lemon juice

Fresh parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.

    Stir in the minced garlic, carrot, zucchini, and red bell pepper. Cook for an additional 5-7 minutes until the vegetables start to soften.

      Add the diced tomatoes (with juices), chickpeas, vegetable broth, thyme, smoked paprika, and cumin. Season with salt and pepper to taste. Bring the mixture to a boil.

        Once boiling, reduce the heat to low and let it simmer for about 15 minutes, allowing the flavors to meld.

          Meanwhile, cook the ditalini pasta in a separate pot according to package instructions. Drain and set aside.

            After the soup has simmered, stir in the cooked ditalini and lemon juice. Let it heat through for about 2-3 minutes.

              Serve hot, garnished with fresh parsley.
