2 cups shredded cooked chicken

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup refried beans (optional)

1/2 cup corn (canned or frozen)

1/4 cup diced onions

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

10-12 small flour or corn tortillas

Cooking spray or olive oil

Fresh cilantro, for garnish

Salsa or sour cream, for serving

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Filling: In a large bowl, combine the shredded chicken, cheese, refried beans (if using), corn, onions, garlic, cumin, chili powder, salt, and pepper. Mix thoroughly until all ingredients are evenly combined.

      Warm Tortillas: If using flour tortillas, warm them in a dry skillet over medium heat for about 30 seconds on each side, just until they are pliable. For corn tortillas, lightly cover with a damp paper towel and microwave for 30 seconds to soften.

        Fill and Roll: Place a few tablespoons of filling in the center of each tortilla, then roll it tightly while folding in the sides to secure the filling. Place the rolled taquitos seam side down on the prepared baking sheet.

          Spray with Oil: Lightly spray or brush the rolled taquitos with cooking spray or olive oil to help them crisp in the oven.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy. Flip halfway through for even cooking.

              Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro and serve with salsa or sour cream on the side for dipping.
