CHICKEN SPINACH AND MUSHROOM LOW CARB

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh spinach, roughly chopped

1 cup mushrooms, sliced (cremini or shiitake work well)

2 cloves garlic, minced

1 small onion, finely chopped

1 cup chicken broth (low sodium)

1/4 cup heavy cream or coconut cream for dairy-free option

1 tsp olive oil

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Grated Parmesan cheese (optional, for garnish)

1/2 tsp red pepper flakes (optional, for heat)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until fragrant and the onion is translucent, about 3-4 minutes.

    Increase the heat to medium-high; add the chicken pieces to the skillet. Season with salt, pepper, and Italian herbs. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.

      Add the sliced mushrooms to the skillet and cook for about 3-4 minutes, until they are softened and browned.

        Pour in the chicken broth and stir to combine, scraping up any browned bits from the bottom of the skillet. Bring to a gentle simmer.

          Reduce the heat to low, then stir in the heavy cream. Allow it to simmer for another 2-3 minutes until the sauce is slightly thickened.

            Toss in the chopped spinach and red pepper flakes, cooking just until the spinach is wilted, about 1-2 minutes.

              Remove from heat and let it rest for a minute. Serve hot, garnished with grated Parmesan cheese if desired.
