Ingredients
  

2 cups cooked white rice

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 can (10.5 oz) cream of mushroom soup

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the cooked rice, chicken pieces, cream of mushroom soup, chicken broth, and frozen mixed vegetables. Mix well until all ingredients are evenly combined.

      Season the mixture with garlic powder, onion powder, thyme, salt, and pepper. Stir until fully integrated.

        Pour the rice and chicken mixture into a greased 9x13 inch baking dish, spreading it out evenly.

          Sprinkle the shredded cheddar cheese on top of the mixture.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

              After 25 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
