Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works well)

1/2 cup basil pesto (store-bought or homemade)

1 cup fresh spinach leaves

1/2 cup sun-dried tomatoes, chopped

1/2 cup feta cheese, crumbled

4 large whole wheat tortillas

1/4 cup balsamic glaze (optional)

2 tablespoons olive oil

Salt and pepper to taste

Instructions

In a mixing bowl, combine the shredded chicken and basil pesto. Toss until the chicken is evenly coated.

Lay the whole wheat tortillas flat on a clean surface.

Place a handful of fresh spinach leaves in the center of each tortilla.

Distribute the pesto chicken mixture evenly among the tortillas.

Sprinkle chopped sun-dried tomatoes and crumbled feta cheese over the chicken mixture.

Drizzle with balsamic glaze if desired, and season with salt and pepper to taste.

Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, securing the filling inside.

Heat olive oil in a skillet over medium heat. Place each wrap seam-side down on the skillet and cook for 2-3 minutes on each side until golden brown and crispy.

Remove from the skillet and let cool for a minute before cutting each wrap in half diagonally.

Serve with extra pesto or balsamic glaze on the side for dipping!
