1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese (plus extra for topping)

1/4 cup marinara sauce (plus extra for serving)

1/4 cup finely chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil, for greasing the muffin tin

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or a drizzle of olive oil.

    In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, 1/4 cup of marinara sauce, chopped parsley, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until just combined; do not overmix.

      Evenly distribute the mixture into the greased muffin tin cups, pressing it down gently to pack.

        Spoon a little extra marinara sauce on top of each meatloaf muffin, followed by a sprinkle of shredded mozzarella cheese.

          Bake in the preheated oven for 20-25 minutes, or until the muffins are cooked through and the tops are golden brown.

            Remove from the oven and let them cool for a few minutes before gently lifting them out of the muffin tin.

              Serve warm with additional marinara sauce on the side for dipping.
