1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 egg, beaten

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

For the Piccata Sauce:

2 tbsp olive oil

2 cloves garlic, minced

1/2 cup white wine (or chicken broth)

1/2 cup fresh lemon juice

1 cup chicken broth

2 tbsp capers, rinsed

1 tbsp fresh parsley, chopped (for garnish)

Salt and pepper to taste

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, pepper, and oregano. Mix until just combined; do not overmix.

      Form Meatballs: With wet hands, form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

        Bake Meatballs: Bake in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
