1 lb ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (for cooking)

For the Creamy Ranch Sauce:

1/2 cup sour cream

1/4 cup mayonnaise

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tsp garlic powder

1 tsp onion powder

1 tsp lemon juice

Salt and pepper to taste

1-2 tbsp milk (to thin, if desired)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, chopped onion, minced garlic, egg, Italian seasoning, salt, and black pepper. Mix well until all ingredients are thoroughly combined, but be careful not to overmix.

      Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet, leaving some space between each meatball.

        Bake the Meatballs: Drizzle the olive oil over the meatballs and bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside. You can check if they're done by cutting one in half; the center should no longer be pink.

          Make the Creamy Ranch Sauce: While the meatballs are baking, prepare the sauce. In a bowl, mix together the sour cream, mayonnaise, dill, garlic powder, onion powder, lemon juice, salt, and pepper. If you prefer a thinner consistency, stir in a tablespoon or two of milk until you reach your desired thickness.
