For the Chicken and Chow Mein:

1 lb (450g) boneless, skinless chicken breast, sliced thinly

8 oz (225g) chow mein noodles

1 cup fresh bean sprouts

1 cup shredded carrots

1 green bell pepper, sliced

1 cup snow peas

3 green onions, chopped

2 tablespoons vegetable oil

1 teaspoon minced garlic

1 teaspoon minced ginger

Salt and pepper to taste

For the Chow Mein Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

2 tablespoons sesame oil

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon sugar

1 teaspoon rice vinegar

Pinch of red pepper flakes (optional)

Prepare Chow Mein Noodles: Cook the chow mein noodles according to the package instructions. Drain and set aside.

    Make the Chow Mein Sauce: In a bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, water, sugar, rice vinegar, and red pepper flakes (if using). Set aside.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and season with salt and pepper. Stir-fry until the chicken is cooked through and slightly golden, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, cooking until fragrant (about 30 seconds). Next, add the bell pepper, snow peas, and carrots. Stir-fry for about 3-4 minutes until the veggies are just tender.

          Combine Everything: Return the cooked chicken to the skillet with the veggies. Add the cooked chow mein noodles and the chow mein sauce. Stir everything together until the sauce thickens and evenly coats the noodles and chicken, about 2-3 minutes.

            Add Bean Sprouts and Green Onions: Gently fold in the bean sprouts and chopped green onions, allowing them to wilt slightly. Adjust seasoning if necessary.

              Serve: Remove from heat and serve hot in bowls, garnishing with additional green onions if desired.
