Ingredients
  

4 chicken thighs, bone-in and skin-on

4 medium potatoes, peeled and sliced into thin rounds

1 large onion, thinly sliced

3 cloves of garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup grated cheese (cheddar or your choice)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the sliced potatoes, onion, and minced garlic. Drizzle with olive oil, sprinkle with thyme, smoked paprika, salt, and pepper. Toss until the veggies are well-coated.

      In a separate bowl, mix the chicken broth and heavy cream together.

        In a greased 9x13 inch baking dish, layer half of the potato mixture on the bottom.

          Place the chicken thighs on top of the potato layer, skin-side up, and season them with salt and pepper.

            Pour half of the cream mixture over the chicken and potatoes, making sure to cover them evenly.

              Add the remaining potato mixture on top, then pour the rest of the cream mixture over everything.

                Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                  After 45 minutes, remove the foil, sprinkle the grated cheese over the top, and bake uncovered for an additional 15-20 minutes or until the chicken is cooked through and the potatoes are tender.

                    Once done, let it rest for 5 minutes, then garnish with fresh parsley before serving.
