2 cups cooked chicken, shredded

1 cup mushrooms, sliced (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil or butter

1 pack of puff pastry (2 sheets, thawed)

1 egg (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the garlic and sliced mushrooms, cooking until the mushrooms are soft and browned, about 5 minutes.

    Combine Chicken and Cream: Stir in the shredded chicken, heavy cream, Dijon mustard, thyme, salt, and pepper. Cook for an additional 5 minutes, allowing the mixture to thicken slightly. Remove from heat and let it cool while you prepare the pastry.

      Prepare the Pastry: Preheat your oven to 400°F (200°C). Roll out each puff pastry sheet on a lightly floured surface. Cut each sheet into 4 equal squares.

        Fill the Pastry: Place a generous spoonful of the chicken and mushroom mixture in the center of each pastry square. Fold the corners of the square to the center, overlapping slightly to seal the filling inside. Press the edges together with a fork to ensure a good seal.

          Brush with Egg Wash: In a small bowl, beat the egg and brush it over the top of each pastry for a golden finish.

            Bake: Arrange the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until they are golden brown and puffed up.

              Garnish and Serve: Once baked, remove them from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley before serving.
