2 cups fresh or frozen cherries, pitted

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 large egg

1/2 teaspoon almond extract

1/2 cup rolled oats

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Cherry Filling: In a medium saucepan, combine the cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Cook over medium heat, stirring occasionally, until the mixture begins to bubble and thicken (about 5-7 minutes). Remove from heat and let it cool slightly.

      Make the Crust and Topping: In a mixing bowl, blend the softened butter and brown sugar until smooth. Add the egg and almond extract, mixing until well incorporated. In another bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in the rolled oats.

        Assemble the Bars: Press half of the oat mixture into the bottom of the prepared baking dish to form a crust. Spread the cherry filling evenly over the crust. Crumble the remaining oat mixture over the cherry layer.

          Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cherry filling is bubbly.

            Cool and Serve: Once baked, remove from the oven and let cool in the pan for about 10 minutes. Then, transfer to a wire rack and allow it to cool completely before cutting into bars.

              Store: Store the cherry bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
