Ingredients
  

1 lb ground turkey

3 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Ground Turkey: In a large skillet over medium heat, add the olive oil. Once hot, sauté the diced onion for about 2-3 minutes until translucent. Then, add the minced garlic and ground turkey. Season with salt, pepper, Italian seasoning, and red pepper flakes, if using. Cook until the turkey is browned and fully cooked through, about 5-7 minutes.

      Add Zucchini and Tomatoes: Stir in the sliced zucchini and halved cherry tomatoes. Cook for another 5 minutes until the zucchini starts to soften.

        Assemble the Bake: In a greased 9x13 inch baking dish, spread the turkey and vegetable mixture evenly. Sprinkle half of the mozzarella cheese over the top, then layer with the remaining turkey mixture, and finish with the rest of the mozzarella and Parmesan cheese.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and lightly golden.
