1 pound ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 bag (32 oz) frozen tater tots

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded mozzarella cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Add Aromatics: Stir in the diced onion and minced garlic, cooking for another 3-4 minutes until the onion becomes translucent.

        Mix in Veggies: Add the frozen mixed vegetables and cook until warmed through, about 2-3 minutes.

          Combine the Base: In a large bowl, mix together the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir this mixture into the beef and vegetable mix until well combined.

            Layer the Casserole: In a greased 9x13 inch baking dish, spread the beef mixture evenly. Sprinkle the shredded cheddar cheese over the top.

              Add Tater Tots: Arrange the frozen tater tots in a single layer on top of the cheese layer.

                Bake: Place the casserole in the preheated oven and bake for 30-35 minutes or until the tater tots are golden brown and crispy.

                  Add Mozzarella: Remove the casserole from the oven and sprinkle the shredded mozzarella cheese over the top. Return the casserole to the oven for an additional 5-7 minutes, until the mozzarella is melted and bubbly.
