12 oz elbow macaroni

1 lb ground beef (or turkey)

1 packet taco seasoning

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1/2 cup chopped red onion

2 cloves garlic, minced

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup salsa

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

1 tbsp olive oil

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Cook Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Brown the Meat: In a large skillet, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

        Add Vegetables and Seasoning: Stir in the minced garlic and red onion into the skillet with the meat, cooking for about 2 minutes until fragrant. Add the taco seasoning and mix well to coat the meat. Follow with the black beans, corn, diced tomatoes, and cooked pasta. Stir until everything is evenly combined. Season with salt and pepper to taste.

          Creamy Layer: In a separate bowl, mix together the sour cream and salsa. Gently fold this mixture into the pasta and meat mixture until well incorporated.

            Assemble the Bake: Transfer the taco pasta mixture to a greased 9x13-inch baking dish. Sprinkle the mozzarella cheese and then the cheddar cheese evenly on top.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.

                Garnish and Serve: Remove from the oven and let it cool for 5 minutes. Sprinkle fresh cilantro over the top and serve warm, either on its own or with a side of tortilla chips.
