Cheesy Scalloped Potatoes and Ham

4 large russet potatoes, peeled and thinly sliced

2 cups diced cooked ham

2 cups shredded cheddar cheese

1 cup heavy cream

1 cup milk

1 medium onion, finely chopped

3 tablespoons butter

3 tablespoons all-purpose flour

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Sprinkle the flour over the onion mixture and whisk constantly for about 2 minutes. Gradually pour in the heavy cream and milk, whisking until smooth and thickened.

          Add the dried thyme, salt, and pepper. Remove from heat and stir in 1 ½ cups of the shredded cheddar cheese until melted and smooth. Reserve the remaining cheese for topping.

            In a greased 9x13 inch baking dish, layer half of the sliced potatoes evenly across the bottom. Follow with half of the diced ham and then half of the cheese sauce. Repeat the layers with the remaining potatoes, ham, and cheese sauce.

              Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                After 45 minutes, remove the foil, sprinkle the reserved cheddar cheese on top, and bake uncovered for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                  Remove from the oven and let it cool for 5-10 minutes before serving.
