8 oz (about 225g) penne pasta

1 tablespoon olive oil

1 pound (450g) Italian sausage, casings removed

1 small onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon as it cooks. Sauté until browned and cooked through, about 6-8 minutes.

      Add Onions and Garlic: Add the diced onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic and sauté for an additional minute until fragrant.

        Mix in Tomatoes and Cream: Stir in the drained diced tomatoes and heavy cream. Add the Italian seasoning, and season with salt and black pepper to taste. Allow the mixture to simmer for about 5 minutes, until slightly thickened.

          Combine Pasta and Cheese: Add the cooked penne pasta to the skillet, stirring well to combine. Sprinkle in the shredded mozzarella cheese and half of the grated Parmesan cheese. Toss until the pasta is fully coated, and the cheese is melted and creamy.

            Serve: Remove from heat, and transfer to serving plates. Top each serving with the remaining grated Parmesan cheese and fresh basil leaves, if desired.
