2 cups cooked rice (white or brown)

1 lb (450g) chicken breast, diced

1 cup salsa (your favorite type)

1 cup corn (canned or frozen)

1 can black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups shredded cheddar cheese

1 cup diced bell peppers (any color)

1/2 cup chopped green onions

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Olive oil for cooking

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet over medium heat, add a splash of olive oil. Season the diced chicken with salt, pepper, cumin, garlic powder, and onion powder. Cook the chicken for about 5-7 minutes, or until it is no longer pink in the center. Remove from heat and set aside.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, salsa, corn, black beans, diced bell peppers, cooked chicken, and half of the cheddar cheese (1 cup). Mix well until all ingredients are evenly incorporated.

        Transfer to Baking Dish: Grease a 9x13 inch baking dish. Pour the mixture into the dish, spreading it evenly.

          Top with Cheese: Sprinkle the remaining cheese over the top of the mixture, ensuring it covers the entire surface.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Top with chopped green onions and fresh cilantro, if desired. Serve warm.
