1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (10 oz) Rotel diced tomatoes with green chilies

8 oz rotini pasta (or pasta of your choice)

2 cups shredded cheddar cheese

1 cup beef broth

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Aromatics: Add the chopped onion and minced garlic to the skillet with the ground beef. Sauté until the onion is translucent, about 3-4 minutes.

        Add Rotel and Spices: Stir in the can of Rotel tomatoes, including the juices. Add the chili powder, cumin, salt, and pepper. Mix well to combine and let it simmer for about 5 minutes.
