8 oz (about 2 cups) elbow macaroni or your choice of pasta

1 can (10 oz) Rotel tomatoes with green chilies, undrained

1 cup (8 oz) shredded cheddar cheese

1 cup (8 oz) cream cheese, softened

1/2 cup milk

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cumin

Salt and pepper to taste

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni (or pasta of your choice) and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce: In the same pot, over medium heat, combine the undrained Rotel tomatoes, cream cheese, and milk. Stir until the cream cheese has completely melted and the mixture is well combined (about 3-5 minutes).

      Season the Sauce: Add the garlic powder, onion powder, cumin, and salt and pepper to taste. Mix thoroughly to ensure all the seasonings are evenly distributed.

        Combine Pasta and Sauce: Add the cooked pasta to the pot with the sauce. Stir well to coat all the pasta with the cheesy Rotel mixture.

          Add Cheese: Incorporate the shredded cheddar cheese into the pasta mixture, stirring until melted and creamy.

            Simmer and Thicken: Allow the dish to simmer for an additional 3-5 minutes on low heat, stirring occasionally. If the mixture is too thick, you can add a little more milk to reach your desired consistency.

              Serve: Once fully combined and creamy, remove from heat. Serve hot, garnished with fresh parsley or cilantro if desired.
