2 medium potatoes, diced

4 large eggs

1 cup shredded cheddar cheese

1/2 cup onion, finely chopped

1/2 cup bell pepper, diced (any color)

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.

    Sauté Veggies: Add the chopped onion and bell pepper to the skillet. Sauté for an additional 3-4 minutes, until the vegetables are softened and slightly caramelized.

      Season: Sprinkle in the garlic powder, salt, and pepper. Stir to combine and ensure the potatoes and veggies are well-coated with the seasonings.

        Scramble the Eggs: In a mixing bowl, whisk the eggs until well beaten. Pour the eggs into the skillet with the potato mixture. Stir gently to scramble the eggs evenly with the potatoes and veggies, cooking until the eggs are fully set.
