Ingredients
  

1 lb ground beef or turkey

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese (divided)

1/4 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 cup zucchini, diced

1 cup carrots, diced

2 cups spinach, chopped

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup marinara sauce (plus extra for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a large casserole dish.

    Prepare the Meat Mixture: In a large bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, 1/2 cup of the shredded cheddar cheese, milk, egg, chopped onion, minced garlic, Italian seasoning, salt, and black pepper. Mix until all ingredients are well incorporated.

      Add the Vegetables: Gently fold in the diced bell peppers, zucchini, carrots, and chopped spinach into the meat mixture until evenly distributed.

        Transfer to Casserole Dish: Press the meat and vegetable mixture evenly into the prepared casserole dish.

          Add Marinara Sauce: Spread the marinara sauce evenly over the top of the meatloaf mixture.

            Top with Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the marinara sauce.

              Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.

                Cool and Serve: Once done, allow the casserole to cool for about 10 minutes before slicing. Garnish with fresh parsley if desired.
