Ingredients
  

For the Fries:

4 large russet potatoes, cut into fries

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon paprika

For the Beef Topping:

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Cheese Sauce:

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 cup milk

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon Dijon mustard

Salt and pepper to taste

Toppings:

½ cup sliced jalapeños (pickled or fresh)

¼ cup chopped green onions

¼ cup sour cream

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Toss the cut potatoes in olive oil, salt, pepper, garlic powder, and paprika until evenly coated.

        - Spread the fries in a single layer on a baking sheet and bake for about 30–35 minutes, flipping halfway through, until they are golden and crispy.

          Cook the Beef:

            - In a skillet over medium heat, sauté the diced onion until translucent.

              - Add the minced garlic and cook for another minute until fragrant.

                - Add the ground beef, breaking it up with a spatula. Cook until browned and no longer pink.

                  - Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes. Set aside.

                    Make the Cheese Sauce:

                      - In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute to form a roux.

                        - Gradually whisk in the milk until the mixture is smooth. Continue to stir until it thickens slightly.

                          - Remove from heat and stir in the mozzarella and cheddar cheeses until melted and creamy.

                            - Add Dijon mustard, then season with salt and pepper to taste.

                              Assemble the Loaded Fries:

                                - Once the fries are done, remove them from the oven and place them on a serving platter.

                                  - Top the fries generously with the cooked beef mixture, then drizzle the cheese sauce all over.

                                    - Add jalapeños, green onions, and sour cream on top as desired.
