8 oz large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper, to taste

4 slices of sourdough bread

4 slices of sharp cheddar cheese

1 cup mozzarella cheese, shredded

2 tablespoons butter, softened

Fresh parsley, chopped (for garnish)

Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, minced garlic, paprika, cayenne pepper, salt, and pepper. Ensure the shrimp are evenly coated with the seasoning.

    Cook the Shrimp: Heat a skillet over medium heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

      Assemble the Sandwiches: On a flat surface, take two slices of sourdough bread. Place a slice of cheddar cheese on each. Distribute the cooked shrimp evenly over the cheese, then top with the shredded mozzarella.
