8 slices of thick-cut garlic bread

1 pound large shrimp, peeled and deveined

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter, softened

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Shrimp: In a medium bowl, toss the shrimp with minced garlic, dried Italian herbs, salt, pepper, and red pepper flakes (if using). Let it marinate for about 15-20 minutes.

    Sauté the Shrimp: In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the marinated shrimp. Cook until shrimp turn pink and are cooked through, which should take about 3-4 minutes. Remove from heat and set aside.

      Prepare the Garlic Bread: Spread the remaining butter on one side of each slice of garlic bread.

        Assemble the Grilled Cheese: On the unbuttered side of 4 slices of garlic bread, layer half of the mozzarella cheese, followed by the sautéed shrimp, and sprinkle half of the Parmesan cheese. Top with the remaining mozzarella and then cover with the second slice of garlic bread, buttered side up.

          Grill the Sandwiches: In a large skillet or griddle over medium heat, add the assembled sandwiches. Cook until golden brown and crispy, about 3-4 minutes per side. If needed, press down gently with a spatula for even toasting.

            Melt Cheese and Finish Cooking: Once both sides are golden and the cheese is melted, remove from the skillet, slice in half, and garnish with fresh parsley.
