8 slices of thick-cut sourdough bread

1 cup cooked shrimp, peeled and deveined

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter, softened

4 garlic cloves, minced

1 teaspoon dried parsley

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Additional parsley for garnish

Prepare the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, dried parsley, garlic powder, salt, pepper, and red pepper flakes (if using) until well combined.

    Cook the Shrimp: In a skillet over medium heat, add a bit of olive oil. Once hot, add the cooked shrimp, season with salt and pepper, and sauté for about 2-3 minutes, just until warm. Remove from heat and set aside.

      Assemble the Sandwiches: Take four slices of sourdough bread. Spread an even layer of the garlic butter on one side of each slice. On the unbuttered side, layer half of the mozzarella cheese, followed by the shrimp, the remaining mozzarella, and finally sprinkle the grated Parmesan cheese.

        Top It Off: Place the remaining slices of sourdough bread on top, buttered side up.

          Grill the Sandwiches: Heat a large skillet or griddle over medium-low heat. Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and crispy while the cheese is melted and gooey. Use a spatula to press down slightly while cooking to improve contact with the skillet for a better crust.

            Serve: Once cooked, remove the sandwiches from the skillet and let them sit for a minute. Slice in half diagonally, garnish with additional parsley, and serve hot with a side of marinara sauce for dipping, if desired.
