8 slices of thick bread (sourdough or Italian)

1 cup large shrimp, peeled and deveined

4 tablespoons garlic butter (or 2 tablespoons unsalted butter + 2 cloves minced garlic)

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon dried parsley

Salt and pepper to taste

Optional: Red pepper flakes for a spicy kick

Prepare the Shrimp: In a medium skillet, melt 2 tablespoons of garlic butter over medium heat. Add the shrimp, seasoned with salt, pepper, garlic powder, and red pepper flakes (if using). Cook for about 3-4 minutes until they are pink and cooked through. Remove from heat and set aside.

    Garlic Butter Mixture: In a small bowl, mix the remaining 2 tablespoons of garlic butter with dried parsley and a pinch of salt. This will be used to spread on the bread.

      Assemble the Sandwich: Take 4 slices of the thick bread. Spread a generous layer of the garlic butter mixture on one side of each slice. On the unbuttered side, layer a generous amount of mozzarella cheese, followed by the cooked shrimp, and then top with sharp cheddar cheese.

        Top and Grate: Place another slice of bread, buttered side up, on top of each assembled sandwich.

          Grill the Sandwich: In a large skillet or griddle over medium heat, carefully place each sandwich. Cook for about 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted.

            Serve: Once both sides are beautifully toasted and the cheese is oozy, remove from the skillet, slice in half and serve hot, with extra garlic butter for dipping if desired.
