4 large russet potatoes

2 tablespoons vegetable oil

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup sliced jalapeños (fresh or pickled)

1/4 cup chopped green onions

1/4 cup fresh cilantro (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: Wash and scrub the russet potatoes thoroughly. Cut them into thin fries (about 1/4 inch thick).

      Season Fries: In a large bowl, toss the cut fries with vegetable oil, garlic powder, chili powder, paprika, salt, and pepper until evenly coated.

        Bake: Spread the seasoned fries in a single layer on a large baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.

          Add Cheese: Once the fries are crispy, remove them from the oven and sprinkle the cheddar and Monterey Jack cheese evenly over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
