Ingredients

1 pound ground beef

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup elbow macaroni

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

1 cup sharp cheddar cheese, shredded

1 cup milk

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

In a large pot, brown the ground beef over medium heat. Drain any excess fat and return the pot to the heat.

Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

Pour in the beef broth and add the diced tomatoes (with their juices). Stir in the Worcestershire sauce, Italian seasoning, and bring the mixture to a gentle simmer.

Add the elbow macaroni to the pot, and cook for about 6-8 minutes, stirring occasionally, until the pasta is al dente.

Reduce the heat to low, and stir in the milk and shredded cheddar cheese. Continue cooking until the cheese is melted and the soup is creamy.

Season with salt and pepper to taste, and simmer for an additional 2-3 minutes, allowing the flavors to meld.

Ladle the soup into bowls, and garnish with freshly chopped parsley before serving.
