Ingredients

12 large pasta shells

2 cups cooked chicken, shredded

1 cup frozen spinach, thawed and drained

1 cup ricotta cheese

1 cup mozzarella cheese, shredded, plus extra for topping

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups marinara sauce

Fresh basil, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the large pasta shells according to package instructions until al dente. Drain and set aside.

Prepare the Filling: In a mixing bowl, combine the shredded chicken, thawed spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, and red pepper flakes. Mix well and season with salt and pepper to taste.

Stuff the Shells: Carefully spoon the chicken and spinach mixture into each cooked pasta shell, filling them generously.

Layer the Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce.

Top with Sauce and Cheese: Pour the remaining 1 cup of marinara sauce over the stuffed shells, ensuring they are well-coated. Sprinkle additional mozzarella cheese on top.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once done, remove from the oven, let it cool for a few minutes, then garnish with fresh basil before serving.
