2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup diced green onions (divided)

1 cup salsa (your choice of mild or spicy)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

8-10 flour tortillas

1 cup enchilada sauce (store-bought or homemade)

1 cup shredded Monterey Jack cheese

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large bowl, mix together the shredded chicken, cream cheese, 1 cup of the cheddar cheese, half of the diced green onions (reserve the other half for garnish), garlic powder, cumin, and chili powder. Stir until well combined.

      Assemble the Enchiladas: Lay out a tortilla and add about ¼ cup of the chicken mixture to the center. Roll the tortilla tightly around the filling and place seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas and chicken mixture.

        Add Sauce: Pour the enchilada sauce over the rolled enchiladas, ensuring they are well covered. Sprinkle the remaining Monterey Jack cheese and cheddar cheese on top.

          Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
