Ingredients

2 cups cooked rice (white or brown)

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese

1 cup cream of chicken soup

1/2 cup milk

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt (or to taste)

1/2 teaspoon paprika (optional, for garnish)

1/2 cup breadcrumbs (optional for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli florets, one cup of shredded cheddar cheese, cream of chicken soup, milk, sour cream, garlic powder, onion powder, black pepper, and salt. Stir until all ingredients are well mixed.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

Add Toppings: If using, sprinkle the remaining cheddar cheese on top. For added crunch, you can also sprinkle breadcrumbs over the cheese and garnish with paprika.

Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Cool and Serve: Allow the casserole to cool for about 5-10 minutes before serving. This will help it set a little bit. Serve warm and enjoy!
