4 cups fresh broccoli florets

2 cups cooked quinoa (or rice)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade substitute)

1 cup Greek yogurt

1/2 cup milk

1/2 cup diced onion

1 clove garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (for topping)

2 tablespoons melted butter

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish to prevent sticking.

    In a large pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.

      In a large mixing bowl, combine the cooked quinoa, cream of mushroom soup, Greek yogurt, milk, diced onion, minced garlic, garlic powder, onion powder, salt, and black pepper. Mix well until everything is well incorporated.

        Fold in the blanched broccoli, ensuring that it is evenly coated with the mixture.

          Pour the broccoli-quinoa mixture into the prepared baking dish, spreading it out evenly.

            Sprinkle the shredded cheddar cheese generously over the top of the casserole.

              In a small bowl, mix the breadcrumbs with the melted butter and then sprinkle this mixture over the cheese.

                Bake in the preheated oven for 25-30 minutes or until heated through and the top is golden and crispy.

                  Remove from the oven and let it sit for about 5 minutes before serving.
