Ingredients

2 cups fresh broccoli florets (steamed and chopped)

1 cup sharp cheddar cheese (shredded)

1/2 cup breadcrumbs (preferably whole wheat)

1/2 cup cooked quinoa

1/4 cup grated Parmesan cheese

2 large eggs (lightly beaten)

2 cloves garlic (minced)

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil (for frying)

Instructions

Prepare the Broccoli: Start by steaming the broccoli florets until bright green and tender, about 4-5 minutes. Allow them to cool slightly, then chop finely.

Mix Ingredients: In a large mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, cooked quinoa, Parmesan cheese, beaten eggs, minced garlic, onion powder, smoked paprika, salt, and pepper. Stir until everything is well combined and forms a cohesive mixture.

Shape the Patties: With your hands, form the mixture into patties, about 1/2 inch thick. You should have approximately 8-10 patties, depending on the size.

Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Cook the Patties: Once the oil is hot, carefully place a few patties in the skillet without overcrowding. Cook for 4-5 minutes on each side, or until they are golden brown and crispy. Add more oil as needed for subsequent batches.

Drain and Serve: Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce or yogurt on the side.
