1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon black pepper

Salt to taste

Optional: crushed red pepper flakes for added spice

Fresh parsley for garnish

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.

    Add the Rice: Pour in the uncooked rice and stir to coat with the oil and aromatics. Let it cook for about 2 minutes, stirring occasionally to lightly toast the rice.

      Combine Broth and Spices: Add the vegetable or chicken broth, paprika, and black pepper to the skillet. Stir well to combine. Bring to a gentle boil.

        Incorporate Broccoli: Once boiling, carefully add the broccoli florets to the skillet. Reduce the heat to low, cover with a lid, and let it simmer for 15-18 minutes, or until the rice is tender and has absorbed most of the liquid. Check occasionally to prevent sticking.

          Add Cheeses: Once the rice is cooked, remove the skillet from the heat. Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with salt and additional spices as needed.
