Ingredients
  

1 lb ground beef

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 cup salsa (mild, medium, or hot, based on preference)

1/2 cup sour cream (for serving)

Fresh cilantro (for garnish)

1 avocado, sliced (optional)

Olive oil (for cooking)

Instructions
 

Cook the Beef:

    - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

      Season:

        - Drain excess fat and stir in the taco seasoning with 1/4 cup water. Cook for an additional 3-4 minutes until the seasoning is well combined and the beef is fully cooked.

          Mix the Filling:

            - In a large mixing bowl, combine the cooked beef, cooked rice, black beans, corn, and half of the cheddar and Monterey Jack cheese. Mix until well combined.

              Assemble the Burritos:

                - Lay a large flour tortilla flat on a clean surface. Spoon about 1/4 of the filling mixture onto the center. Add salsa on top of the filling and sprinkle with some of the remaining cheese. Fold the sides of the tortilla inwards and then roll it from the bottom up, making sure to secure the filling tightly inside.

                  Toast the Burritos:

                    - Wipe the skillet clean and return it to medium heat. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy. You may need to cook them in batches.

                      Serve:

                        - Slice the burritos in half diagonally and serve hot with a dollop of sour cream, avocado slices, and garnish with fresh cilantro.
