1 lb ground beef

8 oz egg noodles

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese

1 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

1 cup frozen peas (optional)

1 cup breadcrumbs (for topping)

2 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: In a large pot, bring salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until the onion becomes translucent (about 3-4 minutes).

        Add Beef: Add the ground beef to the skillet, season with salt, pepper, and Italian seasoning. Cook until the beef is browned and cooked through, breaking it up with a spatula as it cooks. Drain excess fat.

          Combine Ingredients: In a large mixing bowl, combine the cooked noodles, diced tomatoes (with juices), cream of mushroom soup, sour cream, 1 ½ cups of the cheddar cheese, and frozen peas (if using) with the cooked beef mixture. Stir until everything is well combined.

            Prepare the Baking Dish: Pour the beef and noodle mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Add Topping: Sprinkle the remaining ½ cup of cheddar cheese on top of the casserole. Then, evenly sprinkle breadcrumbs over the cheese for a crunchy topping.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the breadcrumbs are golden brown.
