2 large onions

1 ½ cups shredded cheddar cheese

8 slices of crispy bacon, chopped

1 cup all-purpose flour

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon black pepper

2 large eggs

1 cup breadcrumbs (preferably panko)

Oil for frying (vegetable or canola)

Fresh chives for garnish (optional)

Ranch dressing or your favorite dip for serving

Prepare the Onions: Peel the onions and slice them into thick rings (about ½ inch thick). Carefully separate the rings, keeping the larger ones intact.

    Make the Filling: In a bowl, mix together the shredded cheddar cheese and chopped bacon until well combined.

      Stuff the Rings: Take an onion ring and spoon the cheesy bacon mixture into the center. Layer this with another smaller onion ring on top of the filling to create a sandwich. Repeat until all rings are filled and stacked.

        Breading Station: Set up a three-step breading station. In one bowl, combine flour, paprika, garlic powder, and black pepper. In another bowl, beat the eggs. In the third bowl, pour the breadcrumbs.

          Coat the Rings: Take each stuffed onion ring; first, dredge it in the flour mixture, then dip it into the beaten eggs, and finally, coat it in the breadcrumbs. Press gently to ensure the breadcrumbs stick well.

            Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

              Fry the Rings: Fry the coated onion rings in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them and drain excess oil on paper towels.

                Serve: Arrange the cheesy bacon onion rings on a plate, sprinkle with fresh chives if desired, and serve hot with ranch dressing or your favorite dipping sauce.
