12 oz cheese tortellini

1 lb ribeye steak, thinly sliced

1 medium onion, sliced

1 bell pepper, sliced (red or green)

2 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 ½ cups provolone cheese, shredded

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized. Add minced garlic and sauté for an additional minute until fragrant.

      Cook the Steak: Push the vegetables to the side of the skillet and add the thinly sliced ribeye steak. Season with salt and pepper. Cook for about 3-4 minutes, stirring occasionally, until the steak is browned.

        Make the Sauce: Pour in the beef broth, scraping the bottom of the skillet to deglaze and incorporate all the delicious browned bits. Stir in the heavy cream and bring to a gentle simmer.

          Add the Cheese: Gradually add the shredded provolone cheese to the sauce, stirring continuously until melted and smooth. If the sauce is too thick, you can add a bit more beef broth or cream to reach your desired consistency.

            Combine Tortellini: Add the cooked tortellini to the skillet, gently folding them into the sauce and meat mixture. Allow everything to cook together for 2-3 minutes to heat through.
