1 pint fresh strawberries, hulled and halved

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/4 cup sour cream or Greek yogurt

1/4 cup crushed graham crackers (plus extra for garnish)

Zest of 1 lemon

A pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Strawberries: Start by rinsing the strawberries under cold water. Gently pat them dry with paper towels. Carefully hull the strawberries using a small paring knife or a strawberry huller, then slice each strawberry in half lengthwise to create a small boat.

    Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the powdered sugar, vanilla extract, sour cream (or Greek yogurt), lemon zest, and a pinch of salt. Mix until all ingredients are well combined and the mixture is fluffy.

      Add Crushed Graham Crackers: Gently fold in the crushed graham crackers to the cheesecake filling. Make sure they are evenly distributed throughout the mixture.

        Fill the Strawberries: Using a small spoon or a piping bag fitted with a star tip, scoop or pipe the cheesecake filling into each strawberry half. Aim to create a generous mound of filling on top of each strawberry.

          Garnish: Sprinkle a tiny amount of crushed graham crackers on top of the filling for added texture and garnish each strawberry with a fresh mint leaf if desired.

            Chill: Place the filled strawberries on a serving platter and refrigerate them for at least 20-30 minutes to allow the filling to set and chill.
