2 ribeye steaks (about 1-inch thick)

1 cup grated aged cheddar cheese

1/2 cup crumbled blue cheese

1/2 cup grated Parmesan cheese

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh rosemary or thyme for garnish (optional)

Prepare the Steaks: Bring the steaks to room temperature by taking them out of the fridge about 30 minutes prior to grilling. Pat them dry with paper towels to ensure a good sear.

    Marinate the Steaks: In a small bowl, mix Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, and black pepper. Rub this mixture all over the steaks, covering both sides. Allow them to marinate for 15 minutes.

      Preheat the Grill: Preheat your grill to high heat (around 450°F to 500°F). If using a charcoal grill, arrange the coals for direct heat.
