Cheese and Spinach Stuffed Pastry

Ingredients
  

1 sheet of puff pastry (thawed)

2 cups fresh spinach (washed and chopped)

1 cup ricotta cheese

1 cup mozzarella cheese (shredded)

1/2 cup grated Parmesan cheese

1 garlic clove (minced)

1/2 teaspoon nutmeg (optional)

1 teaspoon olive oil

Salt and pepper to taste

1 egg (beaten, for egg wash)

Sesame seeds (for topping, optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

      Add chopped spinach to the skillet, and cook until wilted, about 2-3 minutes. Season with salt, pepper, and nutmeg (if using). Remove from heat and let cool slightly.

        In a large bowl, combine the cooked spinach mixture with ricotta, mozzarella, and Parmesan cheese. Mix well until combined.

          Roll out the thawed puff pastry on a floured surface. Cut into squares, approximately 4 inches by 4 inches.

            Place a tablespoon of the cheese and spinach mixture in the center of each square. Be careful not to overfill.

              Fold the pastry over to form a triangle, sealing the edges by pressing with a fork or by crimping them with your fingers.

                Brush the tops of the pastries with beaten egg and sprinkle with sesame seeds, if desired.

                  Arrange the stuffed pastries on a parchment-lined baking sheet.

                    Bake for 20-25 minutes, or until golden brown and puffed up.
