2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh chives, chopped

3/4 cup buttermilk

1 tablespoon honey (optional, for a touch of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

      Add the cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.

        Stir in the shredded cheddar cheese, grated Parmesan, parsley, and chives until evenly distributed.

          Make a well in the center of the mixture and pour in the buttermilk (and honey if using). Gently stir until just combined. Be careful not to overmix.

            Turn the dough out onto a lightly floured surface and gently knead it just a few times to bring it together. Pat it into a 1-inch thick rectangle.

              Using a biscuit cutter, cut out the biscuits, placing them on the prepared baking sheet. Gather any scraps, re-knead them gently, and cut out additional biscuits.

                Bake for 12-15 minutes, or until the biscuits are golden brown on top.
