1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

½ teaspoon cayenne pepper (adjust to taste)

1 cup buttermilk

½ cup unsalted butter, melted

2 large eggs

1 cup shredded sharp Cheddar cheese

1 cup diced fresh jalapeños (seeds removed for less heat, if desired)

1 cup canned corn, drained

½ cup chopped fresh cilantro (optional for garnish)

Instructions
 

Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish or coat it with non-stick spray.

    In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and cayenne pepper until well combined.

      In a separate bowl, combine the buttermilk, melted butter, and eggs. Beat the mixture until smooth.

        Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.

          Fold in the shredded Cheddar cheese, diced jalapeños, and canned corn until evenly distributed in the batter.

            Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
