Cheddar and Broccoli Casserole

Ingredients
  

4 cups fresh broccoli florets

1 cup uncooked elbow macaroni

1 ½ cups sharp cheddar cheese, shredded

1 cup milk

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil (for breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      In a steaming basket over boiling water, steam the broccoli florets for about 3-5 minutes until vibrant and slightly tender, then set aside.

        In a mixing bowl, combine the milk, sour cream, cream of mushroom soup, Dijon mustard, garlic powder, onion powder, salt, and pepper. Stir until well blended.

          In a large mixing bowl, combine the cooked macaroni, steamed broccoli, and 1 cup of shredded cheddar cheese. Pour the creamy mixture over the pasta and broccoli, and stir until everything is evenly coated.

            Transfer the mixture to the greased baking dish and spread it out evenly.

              In a small bowl, mix the breadcrumbs with olive oil until they are well coated. Sprinkle the breadcrumb mixture over the casserole, followed by the remaining ½ cup of cheddar cheese on top.

                Bake in the preheated oven for about 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
