Caramelized Onion & Swiss Patty Melts

Ingredients
  

1 lb ground beef (preferably 80/20 for juiciness)

1 large onion, thinly sliced

2 tablespoons unsalted butter

2 tablespoons olive oil

4 slices Swiss cheese

4 slices of rye or sourdough bread

2 tablespoons Dijon mustard

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Caramelize the Onions: In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook them slowly, stirring occasionally, for about 20-25 minutes, until they are golden brown and caramelized. Set aside.

    Prepare the Patties: In a bowl, season the ground beef with salt and pepper. Form into 4 equal patties, making a slight indentation in the center of each to help them cook evenly.

      Cook the Patties: In the same skillet used for the onions, add another tablespoon of olive oil over medium-high heat. Once hot, add the beef patties. Cook for about 4-5 minutes per side for medium doneness, adding a slice of Swiss cheese on top of each patty during the last minute of cooking. Cover the skillet to help the cheese melt.

        Toast the Bread: While the patties are cooking, spread the remaining tablespoon of butter on one side of each slice of bread. Once the patties are done, remove them from the skillet and let them rest. Place the slices of bread (butter side down) in the same skillet. Toast until golden brown, about 2-3 minutes.

          Assemble the Patty Melts: On the unbuttered side of two slices of bread, spread the Dijon mustard. Layer each with a cheesy patty, some caramelized onions, and then top with the remaining slices of toasted bread, butter side up.

            Grill the Sandwiches: Return the sandwiches to the skillet, and grill each side for about 3-4 minutes until golden brown and the cheese is melted. You may need to press down slightly with a spatula.

              Serve: Slice the sandwiches in half, garnish with fresh parsley, and serve with your favorite pickles or potato chips on the side.
