Ingredients

6 bone-in, skin-on chicken thighs

1 cup BBQ sauce (your choice)

1/2 cup brown sugar

1/4 cup soy sauce

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a mixing bowl, combine the BBQ sauce, brown sugar, soy sauce, minced garlic, smoked paprika, black pepper, and cayenne pepper. Whisk until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated thoroughly. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably 4-8 hours for deeper flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Sear the Chicken: In an oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later) and place the thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is crispy and golden brown.

Baste and Bake: Flip the chicken thighs over and pour the reserved marinade over them. Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the sauce halfway through baking for extra flavor and caramelization.

Finish on the Grill (Optional): For extra char, you can briefly grill the thighs on high heat for 3-4 minutes after baking, just until you achieve the desired caramelization.

Serve: Remove the chicken from the oven, let it rest for about 5 minutes, then garnish with chopped parsley. Serve with sides like coleslaw or cornbread, and relish the finger-lickin’ goodness!
